Menu Plan Monday


I love the blog I'm an Organizing Junkie and every Monday, she hosts Menu Plan Monday. Today, I've decided to participate. Here's the plan:

Monday: Chicken Enchiladas (I roasted two chicken's yesterday and some of that will be diced and used for tonight's supper. Any of this chicken that is not used by tonight, will be frozen in meal sized portions to use as the week progresses) a green salad and probably corn.

Tuesday: BBQ chicken sandwiches ( using the same chicken mixed with BBQ sauce) and roasted asparagus blend veggies.

Wednesday: Chicken Fajitas (same chicken, sliced and heated with fajita seasoning, peppers and onions. ).

Thursday: Leftovers

Friday: Mexican Pizza (homemade pizza crust, refried beans, seasoned meat, cheese) - served with sour cream, salsa and a side salad.

Saturday: Chicken Florentine, broccoli, bread sticks

Sunday: Chicken Stir Fry over brown rice

Popsicles?

Is that even how you spell Popsicles? Anyway, the kids are already asking for them, which, with the weather lately, isn't that surprising. I've been freezing the leftovers when we make smoothies (I have tupperware Popsicle molds) and they've been a big hit. I especially love that they contain fruit, pro-biotic (in the yogurt), and veggies (carrots, sweet potatoes, zucchini, cauliflower and white bean purees - but not too much - about 2 tablespoons of each), plus protein and fiber to prevent blood sugar spikes and no added sugar.

A few years ago, I checked out this cookbook from our library (I've since forgotten what its called) which had a recipe for slow cooker caramelized onions. Until then it had never crossed my mind that you could make these in a crock pot! It works so nicely - the onions come out perfect. Here's how you do it - thinly slice about 2 lbs of white or yellow onions and put them and1 stick of butter into the crock pot on high for about 6 hours. That's it! You can use less butter if you'd like, but they may not brown as much. The reason I mention these onions is because there are some going in the slow cooker right now. We're having french onion soup tonight with these sandwiches. We skip the mayo and use whole wheat bread when we make them and they are huge hit over here.

Zucchini and Cauliflower Smoothie?

Wow! We are so loving the Sneaky Chef! Today the boys had Zucchini and cauliflower puree as well as white bean puree in their strawberry smoothies. And, we found a 3 pound bag of kiwi at Kroger today, marked down to .99 - SO EXCITED! However, the boys don't like kiwi, so we added some to the smoothie (froze the rest) along with a handful of blueberries. They loved it! So, thank you sneaky chef!

First Reconcilliation!

My big boy has had two important days really close together. First, on Friday, he turned 8 and today, he's making his first reconciliation. I am so excited for him :o) For a while now, we've been practicing his act of contrition and a few days ago, he asked me if I could help him understand what it all meant. Sure, "I said. It starts, Oh, my God, I am heartily sorry for having offended thee. That means," I told him, " that I am sorry with all my heart for my sins." to which he said, "That makes sense. I'm glad I asked because I thought it was, Oh my God, I'm hardly sorry for having offended thee, and that didn't sound very sorry." So cute!
